Easy Mug Cake

Seriously. Growing up, I loved cake. All sorts, really. I didn't have any particular favourites. I just ate them all, from chocolate cakes to simple vanilla to fruity ones. My parents didn't indulge us all the time though, only on birthdays and holidays like Christmas and New Year's. So I ate what was possible when it was accessible. 

And fast forward to today. Being a vegan with not enough free time for baking, I rely on mug cakes. Easy to make with the microwave. It's not like the "real" thing obviously, but it does the job. My cravings are satiated and my tummy's happy. 

Easy Vegan & Gluten-Free Mug Cake
Serves 1

Ingredients:
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • Dash of cinnamon
  • Pinch of salt
  • 1 tbsp peanut butter or tahini (or nut butter of choice)
  • 1/2 of a banana, mashed
  • 1 tsp vanilla essence
  • 1/4 cup almond milk 
  • Chocolate chips
Variations:
  • For a chocolate mug cake, add 1 tbsp of cocoa powder or carob powder.
  • For a gingerbread mug cake, add 1 tbsp of molasses and a pinch of ginger. 

Mix all ingredients in a mug except for the chocolate chips. Once properly mixed, top with chocolate chips.

Microwave for 3-4 minutes until coconut flour is set and the liquid has been absorbed.
