Turn to the next person to you and try to make him/her smile (of course, without seeming like a creep). But, remember this, if you're unhappy, you'll need to work on your happiness first. Because you deserve to be happy, too. We glorify the martyrs, believing the self-sacrifice makes us better people, that it somehow leads to a better world. It doesn't, not really. You know why? Because not everyone works that way. Do yourself a favour and do what makes you happy and spread that happiness around. 

One of the things that makes me happy is baking (DUH!) and I'm spreading the love by sharing baked goods with family and friends. I think my tummy thanks me, too. There's only so much pastry one girl can eat in a day without needing to throw up and nap. 

Now, let me share this super easy breakfast bar recipe that is perfect for when 1) you don't want to make breakfast every single day (the recipe makes enough breakfast for a few days), 2) you have too many ripe bananas, but don't want to make banana bread (yes, it's possible to not want banana bread) and 3) you want to bake something uncomplicated. Who can say no?

Banana Bread Breakfast Bars
Makes 10 bars

Ingredients:
  • 2 cups gluten-free oats (not quick cooking)
  • 2 tbsp ground flax or ground chia
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Pinch of salt
  • 2 ripe bananas, mashed
  • 1/4 cup maple syrup
  • 1/4 cup applesauce (add as required)
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla
  • Add-ins: raisins, dried mulberries, dates, chocolate chips, dried cranberries, pepitas, etc. 

Preheat oven to 350F. Line a square pan with parchment paper and set aside.

In a mixing bowl, mix together oats, ground flax/chia, cinnamon, ginger and salt.

Add in remaining liquid ingredients. Mix until all the oats are covered. For the applesauce, start by adding a tbsp and add more as needed to make the mixture more "well coated".

Fold in add-ins of choice. I added raisins, pepitas, pumpkin seeds and dried mulberries. You can go crazy!

Bake for 20-22 minutes, but careful not to burn the sides as the bars will turn too dry. Let cool completely on a wire rack prior to slicing.
